Happy 5 de Mayo!
I have to admit that we don’t actually celebrate 5 de Mayo in Mexico. At least, definitely not the way we celebrate it here in the U.S. A little history for you in case you are not sure what the day celebrates or if you think it’s our Independence Day (which is on September 16th): 5 de Mayo is a minor holiday in Mexico but it basically celebrates the date of the Mexican army’s victory over the French at the Battle of Puebla during the Franco-Mexican War in 1862. So there you have it. Today, here in the U.S , at least as I see it, it has become as a way to celebrate Mexican culture and heritage. So, I thought today I would share with you one of my favorite, easy appetizers for your 5 de Mayo celebration. Plus, it’s pretty healthy. Enjoy!
Feliz 5 de Mayo! Aunque en México realmente no celebramos este día, en Estados Unidos se ha convertido en unos de los festivos mas grandes del año. Aunque muchos Americanos no saben porque lo celebran, al final del día siento que más que nada, se ha convertido en una manera de celebrar la cultura mexicana, especialmente en zonas donde hay comunidades grandes de mexicanos, como aquí en San Diego. Yo veo como los Americanos aquí se han enamorado de muchos aspectos de la cultura mexicana, (especialmente las fiestas, música y la comida) y me da gusto que de alguna manera, lo hayan incorporado como parte de su cultura también (aunque sea un poco estereotípico). Así que hoy decidí compartir una botana mexicana fácil y saludable para todos ustedes que vayan a festejar este día. Ojalá les guste y que tengan un buen fin de semana!
Ingredients You Need:
- Corn on the cob (boil to cook)
- Cilantro
- Lemon
- Valentina Salsa
- Tajin
- Cotija Cheese (optional)
Directions:
- With a knife, shave off the corn and put in a big bowl.
- Chop up some cilantro and add to the bowl with the corn.
- Add a lemon or two depending on how much lemony juiciness you want. For me, the more the better.
- Add some Valentina. It’s a typical salsa we use for chips, quesadillas, and countless other things. You should be able to find it or something like it at your grocery store in the latin section.
- You can add some Tajin as well. It’s a type of chili powder. Again, you can find this or something similar in the same section as the Valentina.
- Leave it as it is if you want a healthier, vegan type appetizer, or if you want, you can add some delicious cotija cheese. Yummy! So easy and so good.
