Tasty Tuesdays: Buckwheat Cereal with berries and bananas

Buongiorno from Amalfi Coast! Italy is home of the pesto, pizza and pasta, carbs carbs, carbs!! haha and let’s just say I have indulged freely. All this eating makes me miss my healthy habits back home, but I also believe that we have the right to eat and indulge as much as we want as long as its good quality food.

So today, along with my friend Pilar Munoz, from The Whole Table, we have brought you this new recipe! Buckwheat Cereal with berries and bananas. The buckwheat can be considered a cereal … although it is not well known, it is a gluten -free food with a high content of protein, minerals and fiber. I recommend you include it in your diet.

You will need the following ingredients:

– 1/2 cup of buckwheat

– 1/2 cup of water

– 1 cup of almond milk

– 1-2 tablespoons of maple syrup or honey

– 1 teaspoon of cinnamon

– 1 banana

– Toppings: berries, pumpkin seeds , dried coconut, cacao nibs… etc.

In a pot, boil water and add the buckwheat.

Add milk, honey, banana and cinnamon and cook for another 10-15 minutes until you see it is soft.

Transfer to a bowl and add the toppings that you want!
