Oat & Goji Berries Bar

Good morning Santa Margherita,  I am off to explore CinqueTerre today. CinqueTerre has been one my bucket list for some time now, so as you can imagine I am very excited. Make sure to experience it with me through my snapchat @blankitinerary.

Today, on Tasty Tuesday’s I teamed up with my good friend Pilar Muñoz, from The Whole Table to show you how to make easy and delicious Oat and Goji berry bars!! I swear they are as good as they sound.

You will need the following ingredients:

– 2 tablespoons of  ground flaxseed + 4 tablespoons of hot water

– 1 cup of roasted pumpkin puree (or bananas instead)

– 2 cups of old-fashioned oatmeal

– 1 cup of chopped walnuts and almonds

– 1/2 cup of goji berries (or dried fruit)

– pinch of salt

– coconut oil for greasing

Preheat oven to 350F and prepare a loaf pan greasing it with coconut oil.

Mix all ingredients in a bowl and put the mixture into the mold.

Bake for 25-30 minutes.

Let cool and cut into rectangles.
