Tasty Tuesdays: Summer Couscous Salad

Good morning from Madrid. Wow! Yesterday a long day for me. We flew out of San Diego at 11 am, had a layover in Toronto and from there flew 7 more hours to Madrid. I had forgotten how far it was! Nonetheless, I am so happy to be here, safe and sound. I have been in this city before, but please if you have any recommendations, restaurants, stores, do tell. I am all ears!

Today, on Tasty Tuesday’s I am featuring my good friend’s, Hanane Thompson (read about her below. Apart from her good cooking skills, her presentation is magnifiqué! Just look at the pictures! Together, we decided to show you how to make a Summer Couscous salad. Refreshing, healthy and so easy! Enjoy!

Buenos días desde Madrid! Ayer, si que fue un trayecto largo. Salió el vuelo a las 11 am de San Diego, tuvimos escala en Toronto y de ahí fueron otras 10 horas a Madrid. Ya se me olvidaba que tan lejos quedaba! Sin embargo, no me puedo quejar, estoy feliz de amanecer en esta linda ciudad. La ultima vez que estuve aquí fue hace 6 años, así que estaré al pendiente de cualquier recomendación, restaurants, tiendas etc. No sean penosos!!

Por otra parte, como es Martes, y cada martes subo una receta nueva, hoy les voy a ensenar como hacer una ensalada de Couscous, perfecta para el verano. Mi amiga, Hanane Thompson, aparte de ser excelente chef, su presentación es perfecta. Espero disfruten de esta receta, que aparte de saludable es refrescante y rica!

You will need the following ingredients:

– couscous

– a handful of almonds

– a handful of raisins

– 1 medium size zucchini

– fresh mint

– extra virgin olive oil

– salt

Slice the zucchini thin and lightly grill on both sides.

Cook the couscous as specified by the package until nice and fluffy. Add salt.

Chop a handful of almonds.

Add the zucchini, raisins, almonds and mint leaves to the couscous and mix together.

Drizzle olive oil and voila’!
