Tasty Tuesdays: Matcha Blueberry Muffins

Good morning everyone!! If you have been following my blog, you know that is the second round of  Tasty Tuesdays.  Every week, I will be posting easy, healthy recipes that will help us all maintain a healthy lifestyle without having to spend hours in the kitchen. One of the main reasons why I love my blog, is because I get to connect with all of you. I also, want you to get to know me better, so I thought it would be great idea to incorporate these easy recipes, since clean eating plays such an important part in my life.

Today, I teamed up with my good friend Janna Lozowsky, and together we made these delicious Matcha Blueberry Muffins.  Personally, I am a huge fan of Matcha, especially for it’s taste but also because it is packed with antioxidants, boosts your metabolism and detoxifies your body naturally. These muffins are a great option for breakfast especially for those always on the go.

You will need the following ingredients:

– 3  tbsp homemade almond milk (if you are not lactose intolerant, feel free to use 2% fat milk)

– 1/2 cup greek yogurt

– 3 tbsp of coconut oil

– 1 egg

– 1 tsp of pure vanilla extract

– 3 tbsp coconut sugar (add more if you have a sweet tooth!)

– 1 cup brown rice flour

– 1 tbsp matcha

– 1/2 tsp of baking soda

– a pinch of salt

– 1/2 cup of blueberries


Preheat oven to 350 F.


In a bowl mix all wet ingredients, almond milk, greek yogurt, coconut oil, egg, vanilla, and coconut sugar.


Once well mixed, incorporate dry ingredients and fold in blueberries.


Grease a muffin pan, fill with batter.


Bake 10- 12 minutes.


Let them cool down for 5 – 10 mins.


and voila! You may eat your muffins! I’m not telling you how many I ate #sorrynotsorry. SOO GOOD!!
